I don't have a Sandisc but I have a Insignia player and I had the same problem.
I had to load my music inot seperate forlders and then drop them on the player icon. I couldn't use iTunes for anything except to play the music.
The other thing I had an issue with was you HAVE TO USE EJECT by right clicking before you unplug or it won't take.

Well, that's what Good Mommy is doing now ... though using my PC. He tried all afternoon on his Mac with no luck, so persistance paid off, and now I'll spend the evening clicking, dragging and ripping. I experimented and found I could drag folders from my hard drive (though not from iTunes) to the MP3. Since all I have on my hard drive, literally, is GD plus a bit of JGB and Phil, he now has several nice shows :-)
Alternately I can take a CD he wants, rip it to my hard drive, and then load it. Can't do it directly from iTunes, though. So I've ripped Abbey Road and CCR and am doing some classical now. Got a stack of music here. He pops in periodically to say "don't you DARE sneak in any Doors!" (Which I like and he hates with a passion.)
Btw turns out that with Sansa, you don't need to eject from PC. Spent a bunch of time puzzling THAT out, too. Oh I'm just so techie. Not.
edit: Whoops, forgot I'm not officially Mommy anymore. It's gone to Mom. Such an adjustment ...
